A part-time one-man nano-brewery, expanded in 2010 from ten-gallon batches to a 3 BBL system.
Malt is smoked at the brewery over a combination of apple and alder wood for the Hellsmoke Porter. Likewise for the wheat smoked over mesquite for the Old Walt Smoked Wit and the wheat smoked over oak for Vlad the Inhaler, the last being a revival of the Polish Grodziskie style.
The Beached Blonde (offered during the Spring and Summer) is smoke-free, but is brewed with cardamom and coriander. Also smoke-free are the Long island Potato Stout (brewed with local organic potatoes) and mild-mannered ale (an English Pale Mild).
