Bourbon Barrel Aged Belgian-Style Stout
Allagash Black, is brewed with German 2 row barley, Torrified wheat and oats, balanced by a large addition of Belgian dark candi to give the Black a full and silky mouthfeel. Roasted malts give this stout its classic chocolate, toast and malty taste, and contribute to chocolate notes and a hint of roasted coffee in the aroma. The Black is then aged for 10 months in bourbon barrels.
Best With:
For dinner pair Allagash Black with beef Wellington, shepherds pie, and herbed goat cheese. Black is a perfect complement to sweet cream ice cream and oatmeal raisin cookies for dessert.

Barrel Aged Wheat

10.4% ABV
It is a dark, 10% ABV wheat beer. We age a portion of the beer in New American Medium Toast Oak, and a portion in stainless steel for more than six months. We then blend the two different portions of beer to taste. Finally we bottle condition, adding additional yeast and Candi sugar.
Best With:
Odyssey is an excellent addition to entrees like almond crusted chicken and filet mignon. For dessert, serve odyssey with toffee pudding, crème brûlée or white chocolate.

MoJo Risin' Double IPA is a souped-up, extreme version of our MoJo IPA. We added more than half a ton of extra malt and twice the Amarillo hops, resulting in an intense grapefruit-like aroma and flavor and a 10.875% abv.
Best With:
MoJo Risin' is a great pallet cleansing aperitif between courses.

Belgian-Style Pale Ale
If Green Flash were founded in historical Belgium, Rayon Vert would have been our flagship brew. A bold layering of hops finds balance from traditional malts. Bottle conditioning with fresh ale yeast and Brettanomyces finishes the beer, adding a delightful effervescence, dryness and continuously evolving character. Rayon Vert is Green Flash.

Insanity is made by aging our perfectly balanced Blithering Idiot Barley wine in oak bourbon casks. This incredible combination creates a melange of flavors such as malt, dates, oak, vanilla, and bourbon just to name a few.

This beer is best enjoyed on its own as a digestif, and could be paired with a quality Cuban cigar.
