For this ambitious liquid time capsule, we used ingredients and traditions plucked from Egyptian hieroglyphics.

Ta Henket is brewed with an ancient form of wheat and loaves of hearth-baked bread, and it's flavored with chamomile, dom-palm fruit and Middle Eastern herbs. To ferment this earthy ancient ale, Sam and friends traveled to Cairo, set out baited petri dishes and captured a native Egyptian saccharomyces yeast strain.

"It was the strangest picnic I've ever been on," he said.

A bottle-conditioned, French farmhouse-style ale. The name refers to the beer's ability to improve with age and if you choose to age this ale, the tart fruitiness from the yeast and the sweet maltiness from the grains will meld together nicely for several years at cellar temperatures.

From a culinary standpoint, French ales are spectacular food beers for their rich, subtly spicy character, broad range of fruity esters and moderate phenols in the nose, and relatively high, prickly carbonation. French ales are excellent with veal, lamb, or pork, but also work with a variety of seafood, salads, and clear broth soups.

Our Grand Cru is a rich, golden color with fruity and spicy alcohol flavors, supported by a soft malt character. The bottle-conditioning creates the effervescence and a massive, long-lasting head which results in “Belgian lace” as the head fades. The beer consists of malted and unmalted wheat with malted barley; the addition of European noble hops and three Belgian yeast strains create subtle pear, orange and apple flavors.
