At this year's World Beer Championships in Chicago, the Extra was easily the best of the many Trappist beers tasted, scoring 97 points and an "Exceptional" rating. Both beers are fantastic, however, so don't worry if you didn't get what you expected.

In late summer, whole cherries (of the Schaerbeek variety, as tradition dictates) are poured, pits and all, into casks of lambic that have aged for a year and a half - two summers, according to the lambic brewer's calendar. The fruit dissolves and ferments in the cask for four to five months. In that time, even the pits begin to dissolve, lending a slight nutty flavor to the lambic in the cask. The cherry-flavored lambic is blended with old and new lambic to make beer with a strong, sour cherry flavor and bright red color.

A strong blonde ale of about 8.5% alc. by volume that claims vaguely to be an "abbey" beer, Guldenberg bears no resemblance whatsoever to any Tripel you may have sampled, except in color perhaps. It is very hoppy and malty (though not quite as assertive as De Ranke's XX Bitter). A wine-loving friend of ours pronounced it "too good to be beer." We'll just say that Guldenberg shows just how good beer can be.

Best With: 
A complex brew is a perfect choice as an aperitif with crab cakes, scallops or mussels or an assertive cheese such as a Roquefort or a Stilton; particularly delightful with asparagus. The perfect accompaniment to a fruit dessert, crepes or wonderful on its own as a digestif.

This is an incredibly round-flavored and full dimensional Weisse, with a surprisingly low a.b.v. - only 4.9%. Other breweries filter out the yeast from their hefe-weizens, and then "re-seed" them with inactive yeasts - usually a different yeast from the one that fermented the beer. The beer that most people who come to Mahr's love best is the basic Hell, a light-golden lager. A Hell, or Hellesbier, is a Bavarian specialty, not to be confused with the omnipresent Pils that nearly every brewery, from the far North to the Alpine South, has on offer. The Helles bier is squarely focused on malt - rich, sweet, Munich malt with an impossibly fresh new-mown hay flavor -- and doesn't have a whole lot to do with hops. (There are hops in there, but you don't taste them much.) This is a deep and faceted beer, but not a challenging one.
