American Brown Ale

This beautiful, deep russet brew has the sweet and somewhat nutty character of Adam Avery's late (1992-2002) Chocolate Lab, for which it is named. Crystal and chocolate malts give this beer a brown sugar maltiness with hints of vanilla and nuts, while subtle hopping gives it an overall drinkability that's second to none, just like Ellie!

This brown ale is exceptionally great with French onion soup, steak, cured meats, barbecue, game and cheese.

Our limited edition Oak-Aged Imperial Stout is back for the 1st time in 2 years, but with a couple of new twists - instead of being aged in French Oak Wine Barrels, we opted to age it this year in Heaven Hill brandy barrels from the hills of Kentucky. (And like all of our Big Mo Limited Edition releases, it's available in 22 oz. bombers now instead of the 750ml caged & corked Belgian beer bottle.) We racked Imperial Stout into the barrels back in June of this year, and will blend it with un-aged Imperial Stout to woody perfection.

This is no festivus for the restuvus – on the contrary – we start brewing in the Spring and it takes a full two months to reach lagered perfection. Biscuity, malty goodness dominates upfront while the noble pedigree hops lend a properly spicy, dry finish. Zicke zacke, zicke zacke, hoi, hoi, hoi. Time to roast your chicken and upend your stein before the air gets crisp, the leaves flame and fall and the skies fade to black. Auf geht’s!

It's an assertive but deftly balanced beer (somewhere between an American pale ale and an India Pale Ale) brewed with hefty amounts of European malts and American hops. It features a meringue-like head, a copper color, and a hoppy nose, thanks to a big post-boil addition of Centennial hops. To complement its hoppy first impression, Dale's also sports a rich middle of malts and hops, and a bracing finish.

Best With:
This intense example of an American Pale Ale would have a wonderful relationship with a hearty meal of steaks, stews and chili's. Strong and sharp cheeses, like the Roquefort or Stilton would pair nicely.

G'Knight is brewed with dash of chocolate malt in it, to round out its load of hops and balance the beer. The result is an assertive yet exceptionally smooth version of strong beer.

Best With:
A general rule of thumb with this beer is 'the spicier the better.' The impressive hop bitterness in this beer can stand up to just about any degree of spiciness in dry rubbed ribs, Cajun cuisine, curry based Indian food, or wasabi spiced Japanese fare.

India Pale Ale
Strength (ABV):
6.6% ABV
Bitterness (IBU):

A traditional India Pale Ale, the Elissa IPA is very hoppy with a properly balanced malty body. Elissa has huge hop additions in the kettle that give it a wonderful bitterness and is then dry-hopped in the fermenter to create the pleasant floral, hoppy nose. Our reverse osmosis water makes the bitter very soft with no harsh notes to it. The maltiness is derived from British Maris Otter malt. Its rich flavor stands up to the hops that would otherwise dominate this beer. The Elissa is an authentic version of an India Pale Ale (IPA) style.

Wet Hop Ale

The cornerstone of our Harvest series is the beer that started the modern-day fresh hop ale phenomenon in America, our original Harvest Ale.

Created in 1996, Harvest Ale features Cascade and Centennial hops from the Yakima Valley in Eastern Washington. These hops are harvested and shipped as “wet” un-dried hops—the same day they are picked—to our brewery in Chico where our brewers eagerly wait to get them into the brew kettle while their oils and resins are still at their peak.

Creamy, malty, and full-bodied, the Sierra Nevada Stout is satisfyingly rich. Caramel and Black malts give the Stout its deep, dark color and pronounced roasted flavor.

“Sierra Nevada Stout is admirable from nose to finish, with notes of malty sweetness to the palate but plenty of bitterness available to set up a stimulating counterpoint.” – Christopher Finch, A Connoisseur’s Guide to the World’s Best Beer

GOLD MEDAL WINNER
California State Fair (Stout, Sweet & Foreign: 2000)

Best With:
Black malts give Stout a smokiness that demands an equally intense flavor pairing. Smoked or raw oysters are a traditional accompaniment, but other shellfish serve equally well. For vegetarian dishes that stand up to Stout, try lentil stew, marinated eggplant, or smoked tempeh. Stout also makes a delightful dessert beer when matched with creamy tiramisu or toasted almond biscotti.

Sierra Nevada Summerfest

Product - Sierra Nevada Summerfest 09
Brewed By:
Sierra Nevada
Self-Defined Style:
Pilsner-Style Lager
Strength (ABV):
5.0% ABV

Our Summerfest is a refreshing, pilsner-style lager. Its incredible smoothness comes from an extra-long lagering period. Lighter in body than our ales but just as complex in character, Summerfest quenches your thirst with big aroma and a tangy hop bite.

Best With:
While Summerfest is complex enough to accompany any gourmet meal, it is also great at barbecues, picnics, or any time you want a smooth, refreshing beer. Assertive enough to stand up to spicy meats and sauces, its tangy hoppiness also goes well with the sharp, peppery bite of specialty mixed salad greens.

Sierra Nevada Torpedo Ale is a big American IPA; bold, assertive and full of flavor and aromas highlighting the complex citrus, pine and herbal character of whole-cone American hops.

Best With:
With a bold emphasis on hop bitterness, India pale ales are the ultimate beverage pairing for spicy dishes. The sharp hop presence in most India pale ales can stand up to even the most devilish of spices in Cajun, Malaysian, Japanese, Indian, and Mexican cuisine.

Sierra Nevada Wheat

Product - Sierra Nevada Wheat
Brewed By:
Sierra Nevada
Self-Defined Style:
Wheat Beer
Strength (ABV):
4.4% ABV

Pale, smooth, and light-bodied, Sierra Nevada Wheat Beer is brewed from premium malted wheat and light barley malts, utilizing our traditional ale yeast. This unfiltered ale is finished with the characteristically spicy Strissel Spalt hops from the Alsace region of France.

Best With:
The fresh, light palate of Wheat Beer highlights the delicacy of a fish or simple chicken dish without being overpowering. When served with pizza or pasta, the clean wheat flavors of the two elements harmonize perfectly. While Wheat goes well with any type of sauce, we recommend trying a simple presentation of fresh pasta with olive oil and a sprinkling of fresh herbs.
