Hugh Malone begins with a grain bill featuring a blend of Maine grown barley, imported Pilsner, and raw wheat malt. At the beginning of run off, we add a portion of hops to the sweet wort in the kettle; a technique known as "first wort hopping". As the boil begins, a generous amount of Chinook hops are added for bittering. Later, in the whirlpool, the beer is hopped with a blend of Centennial and Amarillo, for aroma. This same blend is used, post fermentation, to lend additional hop character to the finished beer.

Best With: 
The unusually pleasant hoppiness of this Belgian-style ale make it an ideal match for some spicier hearty fare such as beef chili, dry rubbed pork ribs, and heavily spiced Thai dishes.

A special top-fermenting ale yeast is used during fermentation and is responsible for many of Liberty Ale's subtle flavors and characteristics. Carbonation is produced by an entirely natural process called "bunging," which produces champagne-like bubbles. Dry-hopping (adding fresh hops to the brew during aging), imparts a unique aroma to the ale. It is a process rarely used in this country today.

Best With: 
Pastries and desserts, roast goose, cured ham, smoked duck, wild turkey, filet with Dijon sauce, chanterelles, Tournedos Rossini, Châteaubriand. Enjoy with a fine cigar after dinner. Serve in stemmed tumbler at 50°.

A generous amount of the select hop balances out malty backbone of this delicious golden beer.

Best With: 
This IPA would have a wonderful relationship with a hearty meal of steaks, stews and chili's. Strong and sharp cheeses, like the Roquefort or Stilton would pair nicely.

This is our flagship beer. It won the gold medal at The 2006 World Beer Cup, the silver medal at The 2006 Great American Beer Festival and the silver medal at the 2004 World Beer Cup. Copper in color this brew is made from six different malts including: English Pale, Crystal, Munich, Carapils, Wheat and Belgian Caravienna. Toasted Lager displays a balanced flavor of malt and hop which makes for easy drinking. Special lager yeast is used to produce that long lasting, smooth finish.

Best With: 
This beautiful beers toasted malt flavor is fantastic with medium weight meals such as glazed hams, cured meats, smoked fish, chicken, turkey and Cornish hen dishes. This beer would also work well with nuts and salads with nut accents.

This is the famous Brooklyn Black Chocolate Stout, our award-winning rendition of the Imperial Stout style, once made exclusively for Catherine the Great. We use three mashes to brew each batch of this beer, achieving a luscious deep dark chocolate flavor through a blend of specialty roasted malts. We brew it every year for the winter season. It is delicious when newly bottled, but also ages beautifully for years.

Best With: 
Served in a snifter, Brooklyn Black Chocolate Stout is excellent with chocolate desserts, cheesecake, fruit tarts, and ice cream. It is also a very good accompaniment to strong cheeses, especially Stilton.

Refreshing, light, and brisk, wheat beers have been popular in Bavaria for centuries. Weissbier or hefeweizen (wheat beer with yeast) was once brewed exclusively by the Bavarian royal family. In the 1800s they were popular among German immigrants to the United States. Our Brooklyner Weisse is brewed in the classic German style from German wheat and barley malts. Our special Bavarian yeast produces the flavors and aromas that wheat beers are prized for: bananas, cloves, and melon, with a smoky note in the background.

Best With: 
Brooklyner Weisse pairs well with your favorite dishes. Its light touch is perfect with all sorts of salads. It's great with egg dishes at brunch, Mexican dishes and spicy Asian cuisine. It's also terrific with seafood, especially snapper, salmon, shrimp, and crab cakes.

Brooklyn Pennant Ale is a honey-colored pale ale with a brisk malt palage and finely balanced hop character. Pennant is a traditional English-style pale ale. The pale ale style developed in the early 19th century, and was called "pale" because it appeared so in comparison to the darker ale styles of the day. Brooklyn Pennant Ale is brewed from Scottish Maris Otter malt, which is justly prized for its toasty, biscuity flavor and the round smoothness it imparts to beer.

Best With: 
Brooklyn Pennant Ale is great with pizza, roasted and grilled meats, burgers, barbecue, robust fish, shellfish, falafel, crab cakes, and spicy food. Caramel malts lend it the ability to work nicely with steaks, but just as well with grilled vegetables.

This top fermented Trappist beer, refermented in the bottle, is not pasteurized.

Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. To the palate, the taster perceives a pleasant astringency which complements the flavor qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurized.

Best With: 
The hand crafted Chimay cheeses of the Scourmont Abbey would be an obvious choice for this Trappist ale. Beef, pork, veal cured meats, game, pate and even meaty pasta dishes also pair well.

A great gold pilsner will always work with all seafood dishes, brothy soups, tapas, and just about anything off the backyard grill. This brew also lends itself nicely jambalaya, falafels, and certain Caribbean dishes. Fried pub fare is also a fine accompaniment to German pilsener.

Brewed with all natural ingredients, including Caramel, Pilsen and Munich barley malts, and Saaz, Kent and Hallertau hops. Beer authority Michael Jackson describes Corsendonk® Abbey Brown Ale as "A strong, Burgundy-colored ale in the style of the classic Trappist brews of Belgium. Has a very distinctive bouquet: yeasty, fruity and slightly smoky. In palate, it has notes of port, raisins and black chocolate. Matures greatly with age, becoming softer, smoother and deeper in palate. Ideally, should be stored for at least a year, and could mature for at least five."

Best With: 
A rich, silky smooth beer that is a grand accompaniment to red meat, pasta and game dishes, and contrasts nicely with spicy sausage, smoked meats, veal and grilled seafood. Enjoy its malty richness after dinner with nutty cheeses or in a sabayon (zabaglione). Best served at 55°F.

The particular character and the unique taste of "Delirium Tremens" result from the use of three different kinds of yeast. Its very original packing, which resembles cologne ceramics, and the colourful label contribute to its success. In 1997, Stuart A. Kallen nominated Delirium Tremens as "best beer in the world". A gold medal during the "world beer championships" in Chicago (1998) confirmed that worldwide recognition.

Outstanding with steamed mussels and frites.

Too extreme to be called beer? 120 Minute IPA is brewed to a colossal 45-degree plato, boiled for a full two hours while being continuously hopped with high-alpha American hops, then dry-hopped daily in the fermenter for a month and aged for another month on whole-leaf hops!

Clocking in at 15-20% ABV and 120 IBUs, 120 Minute is by far the biggest IPA ever brewed! It's easy to see why we call this beer THE HOLY GRAIL for hopheads!

We brew 120 Minute IPA a few times a year, but it goes fast. If you find some grab a few bottles -- some to enjoy and some to age.

Best With: 
A general rule of thumb with this beer is 'the spicier the better.' The impressive hop bitterness in this beer can stand up to just about any degree of spiciness in dry rubbed ribs, curry based Indian food, or wasabi spiced Japanese fare.

Brewed and bottle-conditioned at Orval monastery founded in the 1100s in the pastoral Belgium countryside. In the early 1990s Dead Guy Ale was created as a private tap sticker to celebrate the Mayan Day of the Dead (November 1st, All Souls Day) for Casa U Betcha in Portland, Oregon. The Dead Guy design proved popular and was incorporated into a bottled product a few years later with Maierbock as the elixir. Strangely, the association with the Grateful Dead is pure coincidence. Dead Guy is a German-style Maibock made with Rogue's proprietary "PacMan" ale yeast.

This hearty, mahogany colored ale is brewed to evoke the dark, full-bodied ales that were a favorite of dockworkers and warehousemen (hence the name "Porter") in 19th century London. It is a good bet that when Dickens' Mr. Pickwick sat down for a pint, we would have been drinking an ale much like our Robust Porter. This is a smooth and very drinkable beer, characterized by its well-balanced malt and hops, plus subtle notes of coffee and chocolate.
