"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. "A world famous India Pale Ale.It pours a luscious bubbly gold with a fluffy white two finger head. The head retention is perfect. It laces the glass all the way down to the final sip. As soon as I poured it into the glass I could smell hints of lemon, apricot, hops, and a sweet fruit I couldn’t quite detect. When I took my first sip I could immediately taste the mix of apricot, lemon, and hops. Due to the sweet fruit blend I didn’t catch the bitterness of the hops right away, but after a few sips and a pause or two, the bitter flavor hung in my mouth for a while. This is a solid IPA.

A modern update on a 9th century Finnish proto-beer.
Brewed with rye, we caramelize the wort with white hot river rocks, then ferment it with a German Weizen yeast. In addition to juniper berries foraged directly from the Finnish country-side we added a sort of tea made with black tea, cardamom, cinnamon, ginger, cloves, and black pepper.

The spicing is subtle and balanced and Sahtea is a highly-quaffable, truly-unique brew with a full-mouth feel.

Our Pilsner is made from three different European malts including a large portion of Pilsner malt which provided the slightly sweet and malty backbone of the beer. In order to achieve the crisp bitterness and aromatic nose, we brewed with Tetnanger and Czech Saaz hops. The beer was dry hopped with the Saaz as well. The authentic Bohemian Pilsner yeast added depth and after a prolonged lagering period helped produce much of the character of this beer. Our Bohemian Pilsner has a smooth, slightly malty flavor that is balanced with a crisp bitterness and clean hop aroma.

Best With:

Our new canned good is a delicious, small-batch version of the beer that made Pilsen, Czechoslovakia famous. Mama’s is made with hearty amounts of pale malt, German specialty malts, and traditional (Saaz) and 21st century Bavarian hops. It’s the perfect antidote for the watered-down, cornfed versions of pilsner clogging America’s shelves. Our first canned lager, it’s also fermented at cool temperatures with a German yeast. When Martha and I began thinking about what type of beer to brew next for PRETTY THINGS, there was no discussion. In fact we've had it figured out for years. We both had our hearts set on brewing the sort of beer we loved so much in Yorkshire.

Many people know that Martha and I love Theakston's Old Peculier, at least the cask version. But Robinson's Old Tom is high on our list as well. Now that Samuel Smith has released Yorkshire Stingo that makes three. At the brewery where I worked in Yorkshire we made a unique beer called Morocco Ale that is quite similar as well.

Brown ales typically have a mild hop presence and a subtly sweet, complex malt character that meshes beautifully with honey and tomato based barbecue sauce on all manner of grilled meats. Brown ale also shines with French onion soup, and could even work with a mild cigar.

Gratefully dedicated to the Rogue in each of us. In the early 1990s Dead Guy Ale was created as a private tap sticker to celebrate the Mayan Day of the Dead (November 1st, All Souls Day) for Casa U Betcha in Portland, Oregon. The Dead Guy design proved popular and was incorporated into a bottled product a few years later with Maierbock as the elixir. Strangely, the association with the Grateful Dead is pure coincidence. Bright and clear in appearance. The color of a great single malt, but the lower alcohol of the OG throws the light in different ways than a scotch. Light and citrusy aroma. Almost like a barley wine cured orange peel. The flavor is hoppy as all get out. Young and brash. And to my palate quite delicious! Noticeable alcohol...quite clean. Mouth feel is almost light on the palate (in a barley wine sorta way) that might not suggest the alcohol level.

Best With: 
Primarily thought of as a digestif, it turns out that barley wines have an affinity to lamb, venison and wild boar. Classic cheeses such as English and Vermont cheddars as well as aged Gruyeres from Switzerland. Caramelized desserts as crème brûlée and crepes as well as a good vanilla ice cream can finish a wonderful evening of food and beer.
