Great Divide
Self-Defined Style:
Strong Ale
Strength (ABV):

We cellar Hibernation until late October, when it reaches the peak of perfection. This lengthy aging process gives Hibernation its revered malty richness, complex hop profile and hearty warming character, which is perfect right out of the bottle or cellared for longer periods of time. Hibernation is a lively treat that really beats the winter chill. This scrumptious, collectible, and imminently cellarable ale is only available for six weeks each year, from November 1 to December 15. Hibernation Ale is the perfect gift or accompaniment to your winter festivities.

Best With:
Romano - a four-year aged, hard Dutch cow's milk cheese, with a nutty, toffee-like sweetness, and Mimolette - a nutty, sweet, gouda-like French cow's milk cheese.

d'Achouffe Houblon Chouffe

Product - D Achouffe Houblon Chouffe
Brewed By:
d'Achouffe
Self-Defined Style:
Belgian Double IPA
Strength (ABV):
9.0% ABV

Big white head. Cloudy (unfiltered, unpasteurized, bottle-conditioned). Intense hop aroma (use of Amarillo hops for dry-hopping). Malty sweetness in the background. Estery fruitiness clearly shines through signaling the arrival of something unusual. Strong, complex hops flavor. High but not outlandish, bitterness. Big clean malty body. Again, estery flowery-fruitiness provides an astonishing third dimension. Long, lingering bitterness beautifully balanced with malt sweetness, and a fruity dry finish.

Best With:
The unusually pleasant hoppiness of this Belgian-style ale make it an ideal match for some spicier hearty fare such as beef chili, dry rubbed pork ribs, and heavily spiced Thai dishes.

whiskey cask aged imperial stout

We set about to unite two of Scotland proudest heritages and produce a product which combined all that was good about Scotland’s whisky producing history and our contemporary take on a traditional Scottish style of stout. The fact that we have developed this product in conjunction with Duncan Taylor Ltd of Huntly means we mature our beer in the casks that once housed some of the most prestigious whiskies available today. The distinct flavours of these whiskies is beautifully infused into the beer giving a unique and unrivalled experience for both beer and whisky lovers.
