"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big, the malt was coming out of the top of the mash tun. After fermentation, we brought in some bourbon barrels that aged the stout. One hundred days later, Bourbon County Stout was born. A liquid as dark and dense as a black hole with thick foam the color of a bourbon barrel. The nose is an intense mix of charred oak, chocolate, vanilla, caramel and smoke.

"Back in the early '90's, our landlord went bankrupt and they tore down the mall surrounding the original Goose Island Brewpub. In the early 1990s Dead Guy Ale was created as a private tap sticker to celebrate the Mayan Day of the Dead (November 1st, All Souls Day) for Casa U Betcha in Portland, Oregon. In Britain, seasonal brews for winter are high in alcohol, robust, malty, and dark. The two main styles of these brews are Old Ales and Barleywines. Primarily thought of as a digestif, it turns out that barley wines have an affinity to lamb, venison and wild boar. "A world famous India Pale Ale.It pours a luscious bubbly gold with a fluffy white two finger head. The head retention is perfect. It laces the glass all the way down to the final sip. As soon as I poured it into the glass I could smell hints of lemon, apricot, hops, and a sweet fruit I couldn’t quite detect. When I took my first sip I could immediately taste the mix of apricot, lemon, and hops. Due to the sweet fruit blend I didn’t catch the bitterness of the hops right away, but after a few sips and a pause or two, the bitter flavor hung in my mouth for a while. This is a solid IPA.

This brew is the result of the long friendship of Brooklyn brewmaster Garrett Oliver and Schneider brewmaster Hans-Peter Drexler. Old Engine Oil is a near-black brew with a silky-smooth rummy aroma, a coffee-like palate, and a suggestion of the darkest chocolate. It is made from pale malt, roasted barley and malted oats. Old Engine Oil is well-hopped with the sweetish variety Galena from Washington State, Worchester Fuggles and East Kent Goldings.

Best With:

Named in honor of our founder Jeff's bike trip through Belgium, Fat Tire Amber Ale marks a turning point in the young electrical engineer's home brewing. Belgian beers use a far broader pallet of ingredients (fruits, spices, esoteric yeast strains) than German or English styles. Jeff found the Belgian approach freeing. Upon his return, Jeff created Fat Tire and Abbey Belgian Ale, (assuming Abbey would be his big gun). He and his wife, Kim traveled around sampling their homebrews to the public. Fat Tire's appeal quickly became evident. People liked everything about it. Except the name.

Our new canned good is a delicious, small-batch version of the beer that made Pilsen, Czechoslovakia famous. Pliny the Elder was a Roman naturalist, scholar, historian, traveler, officer, and writer. Homunculus, the newest addition to the Big Beer Series portfolio, is also the first beer to move up from our single-batch, draft-only Short Batch Series. Inspired by “Houblon Chouffe” from Belgium’s Brasserie d’Achouffe, our beer was first brewed in 2007 and was called “The Gnome.” This was a great name for an individual, draft-only release. Once the decision was made to scale-up to a Big Beer size, we decided to change the name in respect of Achouffe’s branding and image.
