Merchants suggested new offerings

It is a dark, 10% ABV wheat beer. We age a portion of the beer in New American Medium Toast Oak, and a portion in stainless steel for more than six months. We then blend the two different portions of beer to taste. Finally we bottle condition, adding additional yeast and Candi sugar.

This is our flagship beer. It won the gold medal at The 2006 World Beer Cup, the silver medal at The 2006 Great American Beer Festival and the silver medal at the 2004 World Beer Cup. Copper in color this brew is made from six different malts including: English Pale, Crystal, Munich, Carapils, Wheat and Belgian Caravienna. Toasted Lager displays a balanced flavor of malt and hop which makes for easy drinking. Special lager yeast is used to produce that long lasting, smooth finish.

Here in Brooklyn we've combined European malt and hops, Belgian dark sugar, and raw wildflower honey from a New York family farm to create Brooklyn Local 2. Our special Belgian yeast adds hints of spice to the dark fruit, caramel, and chocolate flavors. After 100% bottle re-fermentation, the beer reveals a marvelous dry complexity, enjoyable by itself or at the dinner table.

Orchard White is an unfiltered, bottle conditioned Belgian-style witbier. This hazy, straw yellow beer is spiced with coriander, citrus peel and lavender added to the boil and whirlpool. A spicy, fruity yeast strain is used to add complexity, and rolled oats are added for a silky texture.

A dry Imperial stout with rich black color and aromas of roasted coffee, molasses, dark chocolate, toffee and caramel. Rich, powerful, and lingering.

An imperial IPA that was brewed to turn your world upside down. Hops have got you coming and going. Pungent aromatics up front paired with a malt balanced backbone and a smooth bitter finish.

"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big, the malt was coming out of the top of the mash tun. After fermentation, we brought in some bourbon barrels that aged the stout. One hundred days later, Bourbon County Stout was born. A liquid as dark and dense as a black hole with thick foam the color of a bourbon barrel. The nose is an intense mix of charred oak, chocolate, vanilla, caramel and smoke.

While traveling in Belgium, we visited an abbey that was surrounded by great legends and folklore. We were lucky enough to hear their story and enjoy the great beer they brew. We wanted to share what we'd heard and tasted, so we created Matilda. Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops making it a great beer to enjoy with a plate of fresh mussels.

Way smooth and silky with a nice wheaty-esque-ish-ness. Just the little sumpin' sumpin' we all need to kick Summer into full swing!

Full bodied, hints of citrus and tangy tangerine are evident in a massive complex hoppy flavor and aroma, but balanced by an assertive maltiness. "At the height of the heat in the heart of the summer, we felt the only cure was a raging mouthful of fresh Hops and Malt. Caution: May remove enamel from teeth."

Dale's Pale Ale is our flagship beer and America's first hand-canned craft beer. It's an assertive but deftly balanced beer (somewhere between an American pale ale and an India Pale Ale) brewed with hefty amounts of European malts and American hops. It features a meringue-like head, a copper color, and a hoppy nose, thanks to a big post-boil addition of Centennial hops. To complement its hoppy first impression, Dale's also sports a rich middle of malts and hops, and a bracing finish.

"Jack D'Or" is a simple table beer, or "Saison Americain" as we're referring to it. We are not trying to coin a beer style – we’re just having fun. At PRETTY THINGS we don't brew styles per se. Instead, we re-imagine everything and leave the style numbers in books on the shelves where they belong. What that means is that while other people might be able to put our beers into a category, we have a hard time with it! Our beers are first and foremost creative beasts, not "types" of beer. Jack D'Or is the kind of beer Martha and I like to drink before, after and during a great meal.

When Martha and I began thinking about what type of beer to brew next for PRETTY THINGS, there was no discussion. In fact we've had it figured out for years. We both had our hearts set on brewing the sort of beer we loved so much in Yorkshire.

Many people know that Martha and I love Theakston's Old Peculier, at least the cask version. But Robinson's Old Tom is high on our list as well. Now that Samuel Smith has released Yorkshire Stingo that makes three. At the brewery where I worked in Yorkshire we made a unique beer called Morocco Ale that is quite similar as well.

Amber-mahogany color, fruity, clove and nutmeg apple aromas, clean, full bodied and well balanced, light, bitter finish.

Tröegs Brewery’s Flagship beer, HopBack Amber Ale derives its name from a vessel in the brewhouse called a hopback. As the ‘wort’ is being transferred from the brewhouse to fermentation it passes through the hopback vessel. Packed full of fresh whole flower hops, the wort slowly circulates through this vessel extracting the essence of the aromatic hops. This vessel adds more time and more hop character that creates a fresh, spicy taste and rich caramel note that defines this signature ale.

A Tröegs Brewery classic, our Pale Ale is copper colored with generous amounts of Cascade hops to create a floral, aromatic pale ale that smells as delicious as it tastes.

The Troegenator Double Bock, is a dark, strong lager (8.2% abv). It pours into a glass with a bronze to brown color, fluffy white head and bready malt aroma. The Troegenator leaves a rich, warming feeling and subtle spicy flavors. The style, Double Bock, dates back a century or so ago. During periods of fasting without solid foods, the Monastic brewers relied on the double bock; a stronger, richer beer to fulfill their basic nutritional needs. Known to them as "liquid bread," a double bock has a strong malt aroma and chewy rich body.

(Re) Introducing Helios Ale. We’ve rebranded and repackaged the former V-Saison and now introduce Helios Ale. This bottle conditioned, Belgian-inspired ale remains the same refreshing ale that you enjoyed as V-Saison, however, in a more approachable, less expensive 22 oz capped bottle. Helios Ale has an earthy, aromatic hop start and shifts into aspects of lemon peel and black pepper. This is a quenching, invigorating ale, despite its substantial strength.

Heaps of hops give this pale lager a bracing, herbal bite over layers of soft and smooth malt flavor. This refreshing combination of tastes makes Prima a classy quencher in the tradition of the great pilsners of Europe. Dry and delightful, this is an elegant beer.

From the tradition started by the monks of St. Francis of Paula in 1634 comes this warming beer of rich heritage. A dark, rich lager of sublime complexity and character, St. Victorious is created from multiple German malts. Laborious decoction mashing yields the choicest elements of the malt. Long, cold aging mellows the strong temperament of this subtle beer. Celebrate the end of winter with a warming draft of St. Victorious Doppelbock!

Amber, aromatic strong ale... Our vintage-dated, Belgian-style specialty ale, offered in corked 25.4 oz. bottles, is a sensation in subtlety. Heady with a aromatic fruity start and taste, this amber ale features hints of pear and apricot in its well-nuanced flavor. The initial impression of fruitiness concludes in a refreshing dryness that begs you to sip again. Be fore- warned, this ale is immense as it registers 12% abv.
