With age, this beer will dry out and will become more complex with rustic notes of leather and earth from the contribution of a wild yeast strain. Being a Saison, Saison Rue is ambiguous unto itself as it is a different beer when fresh and when aged. We hope you enjoy it in all of its incarnations.

Bourbon Barrel Aged Stout
Strength (ABV):

"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big, the malt was coming out of the top of the mash tun. After fermentation, we brought in some bourbon barrels that aged the stout. One hundred days later, Bourbon County Stout was born. A liquid as dark and dense as a black hole with thick foam the color of a bourbon barrel. The nose is an intense mix of charred oak, chocolate, vanilla, caramel and smoke.

Oskar Blues Dale's Pale Ale

Product - Oskar Blues Dales
Brewed By:
Oskar Blues
Self-Defined Style:
American Pale Ale
Strength (ABV):
6.5% ABV

Dale's Pale Ale is our flagship beer and America's first hand-canned craft beer. It's an assertive but deftly balanced beer (somewhere between an American pale ale and an India Pale Ale) brewed with hefty amounts of European malts and American hops. It features a meringue-like head, a copper color, and a hoppy nose, thanks to a big post-boil addition of Centennial hops. To complement its hoppy first impression, Dale's also sports a rich middle of malts and hops, and a bracing finish.

Best With:
This intense example of an American Pale Ale would have a wonderful relationship with a hearty meal of steaks, stews and chili's. Strong and sharp cheeses, like the Roquefort or Stilton would pair nicely.

Pretty Things Jack D'Or

Product - Pretty Things Jack D'Or
Self-Defined Style:
Saison Americain
Strength (ABV):
6.4% ABV
Bitterness (IBU):
45 IBU

"Jack D'Or" is a simple table beer, or "Saison Americain" as we're referring to it. We are not trying to coin a beer style – we’re just having fun. At PRETTY THINGS we don't brew styles per se. Instead, we re-imagine everything and leave the style numbers in books on the shelves where they belong. What that means is that while other people might be able to put our beers into a category, we have a hard time with it! Our beers are first and foremost creative beasts, not "types" of beer. Jack D'Or is the kind of beer Martha and I like to drink before, after and during a great meal.

Pretty Things Baby Tree

Product - Pretty Things Baby Tree
Self-Defined Style:
Quadruple
Strength (ABV):
8.6% ABV

Baby tree is a "quadruple" brewed with a single strain of Belgian yeast. While a commonly used style name on the internet, "quadruple" isn't in fact a style name at all but a brand of beer produced by La Trappe in the Netherlands. Its found a common usage as a cover-all for the darkest and strongest beers produced by Trappist monks, mainly because they haven't named them themselves. Two Belgian brewers use the term "Abt", Flemish for "Abbot". Historically the best beer made in an abbey (by the Cistercians/Trappists at least) was referred to in Latin simply as "prima melior".

Pretty Things Saint Botolph's Town

Product - SAINT BOTOLPH'S TOWN
Self-Defined Style:
Rustic Dark Ale
Strength (ABV):
5.9% ABV

When Martha and I began thinking about what type of beer to brew next for PRETTY THINGS, there was no discussion. In fact we've had it figured out for years. We both had our hearts set on brewing the sort of beer we loved so much in Yorkshire.

Many people know that Martha and I love Theakston's Old Peculier, at least the cask version. But Robinson's Old Tom is high on our list as well. Now that Samuel Smith has released Yorkshire Stingo that makes three. At the brewery where I worked in Yorkshire we made a unique beer called Morocco Ale that is quite similar as well.

Best With:
Brown ales typically have a mild hop presence and a subtly sweet, complex malt character that meshes beautifully with honey and tomato based barbecue sauce on all manner of grilled meats. Brown ale also shines with French onion soup, and could even work with a mild cigar.
