Brewed By:
New Glarus
Self-Defined Style:
Organic Pale Ale
Strength (ABV):
6.2% ABV

Since 1516 Brewers have led the purity revolution. They mandated only four natural ingredients be used to brew beer. This Reinheitsgebot law was the first ever food purity regulation and New Glarus Brewmaster Dan Carey has consistently respected out palates by employing yeast, hops, barley and water to explore a wide spectrum of flavor. Today Dan pushed the purity envelope by using Organic Hallertau Hops from Germany with Wisconsin organically malted barley to create complex and assertively hoppy golden ale. This beer is even naturally carbonated.

I have been brewing the Louie’s recipe for 15 years now. Brewing this beer is like wearing a favorite shirt or old hat; it’s reliable and comfortable. I look forward to the rich and complex malt aromas that are released during the mash, you might also catch some caramel and earthy notes. A portion of the malt bill is honey malt from Garnbrinus Malting Co. It adds that sour and honey aroma to the ale. Since the malt is really the highlight of this brew we kept it simple on the hops and the yeast. The yeast strain we use produces a subtle dried fruit flavor.

This is one of my favorite everyday beers. First developed in the fall of 1997, we designed Pull Chain to be a well balanced and refreshing. We use a blend of American and English Hops to create a play between hop bitterness and malt flavor. This allows Pull Chain to be paired with with most foods. The simplicity of the mash and the hop additions make the brewing process very easy going, that is, until we get to the dry hopping process. Timing the dry hopping can be tricky. It has to be timed just right to get the maximum aroma from the hops.

South Shore American Pale Ale

Substyle - American-Style Pale Ale
Brewed By:
South Shore
Self-Defined Style:
Pale Ale
Strength (ABV):
5.0% ABV

Two things distinguishes this pale ale from our standard pale. First is the color. We've made some minor deletions in some dark caramel malt and the most obvious is that we poured the hops to it. Much like an India Pale Ale as bitterness goes, however this beer features Northwest American bittering and aroma hops. (The IPA featured English style hops). Not for the faint of heart. A bold assertive brew with distinguishing citrus smells and flavors from the hops. Yet the malty sweetness is there enough to provide flavor stability.

Best With:
The fragrant bouquet and spicy flavor of pale ale lends to this beer’s ideal match with generously spiced foods such as Southern barbeque, wasabi crusted Japanese dishes, and curry based Indian dishes. This style is also the perfect complement to grilled meats, burgers, and pizza.
