In commemoration of every miraculous year of Shmaltz Brewing, Jewbelation is brewed with the number of malts, hops, and ABV percentage as our anniversary. Our most recent edition of Jewbelation, Jewbelation 14, was brewed with 14 malts, 14 hops, and is 14% ABV, for example. The result is an uber-complex strong ale, bursting with flavors of chocolate, espresso, raisins, and molasses. Look for Jewbelation 15 in mid-October 2011!

Brewed By:
Hoegaarden

Belgian White Beer
Strength (ABV):
5.0% ABV

Hoegaarden is the authentic Belgian wheat or white beer. It has a unique and extremely complex brewing process whereby the brand is first top fermented and then is refermented within the bottle - ending up in a unique cloudy-white appearance. The brand's unique appearance is mirrored by its one-of-a-kind taste - sweet and sour beer with a little bitterness, slightly spicy, with a strong touch of coriander and a hint of orange, perfect for warm summer days, instead of other refreshing beverages. Refreshing, a little quirky, and decidedly different - naturally.

Best With:
This Belgian-style wheat beer works well on its own as an aperitif, but also pairs well with lighter fare such as salads with a citrus dressing. It can work surprisingly well with omelets made with apples and goat cheese. Some people enjoy this beer with a slice of orange as a garnish.

Why does the world need another IPA? Because this one ain't like them others. Using hops of a different color, earthy and herbal, it's well balanced by bready malt. The result? An English-style IPA that separates itself from the ubiquitous bunch. Cartloads of bitter monkeys flinging wasteful amounts of bananas into the jungle - we're so done with that.

Initial malt sweetness followed by earthy, straw and herbal hop notes. Finishes dry with a pleasant lingering bitterness and distinctly British hop character.

I have been brewing the Louie’s recipe for 15 years now. Brewing this beer is like wearing a favorite shirt or old hat; it’s reliable and comfortable. I look forward to the rich and complex malt aromas that are released during the mash, you might also catch some caramel and earthy notes. A portion of the malt bill is honey malt from Garnbrinus Malting Co. It adds that sour and honey aroma to the ale. Since the malt is really the highlight of this brew we kept it simple on the hops and the yeast. The yeast strain we use produces a subtle dried fruit flavor.

This is one of my favorite everyday beers. First developed in the fall of 1997, we designed Pull Chain to be a well balanced and refreshing. We use a blend of American and English Hops to create a play between hop bitterness and malt flavor. This allows Pull Chain to be paired with with most foods. The simplicity of the mash and the hop additions make the brewing process very easy going, that is, until we get to the dry hopping process. Timing the dry hopping can be tricky. It has to be timed just right to get the maximum aroma from the hops.

Enlightened Black Ale
Strength (ABV):
5.5% ABV

Born of a flood and centuries-old Belgian text, 1554 Enlightened Black Ale uses a light lager yeast strain and dark chocolaty malts to redefine what dark beer can be. In 1997, a Fort Collins flood destroyed the original recipe our researcher, Phil Benstein, found in the library. So Phil and brewmaster, Peter Bouckaert, traveled to Belgium to retrieve this unique style lost to the ages.

Best With:
Chef Todd Davies, Partner of Tap House Grill, recommends braised Dietzler Farms Organic Shortribs, turnip greens, cranberry beans, and chestnut puree. Rich malts, chocolate, play perfectly with the braised red meat(any for that matter)Lots of thyme, tomato and garlic(in the braise with the 1554) are integral to deepening the flavors of the malts. Peppery bitterness from the greens, offset some of the sweetness of the malts. Cranberry beans(named for color only) are rich and creamy and complement the chestnut puree with their earthiness and rich...enhancing more of the malt flavor....this dish really pulls out the beer.

Belgian beers use a far broader pallet of ingredients (fruits, spices, esoteric yeast strains) than German or English styles. Jeff found the Belgian approach freeing. Upon his return, Jeff created Fat Tire and Abbey Belgian Ale, (assuming Abbey would be his big gun). He and his wife, Kim traveled around sampling their homebrews to the public. Fat Tire's appeal quickly became evident. People liked everything about it. Except the name.

Best With:
Chef Todd Davies, Partner of Tap House Grill, recommends fontina stuffed banana peppers with smoked chicken, fennel sausage, corn flan, and tomato fonduta. Spicy banana peppers cut the sweet malts, as the stuffing of the sweet hickory smoked chicken and fennel scented sausage complement, the fontina adds a pepperey element, complimenting the hops. The tomato sauce, cooked with fat tire, blends and smooths the ingredients, and the sweet corn flan cuts the spice, while adding and intensifying the sweetness of the malts.

Oskar Blues Dale's Pale Ale

Product - Oskar Blues Dales
Brewed By:
Oskar Blues
Self-Defined Style:
American Pale Ale
Strength (ABV):
6.5% ABV

Dale's Pale Ale is our flagship beer and America's first hand-canned craft beer. It's an assertive but deftly balanced beer (somewhere between an American pale ale and an India Pale Ale) brewed with hefty amounts of European malts and American hops. It features a meringue-like head, a copper color, and a hoppy nose, thanks to a big post-boil addition of Centennial hops. To complement its hoppy first impression, Dale's also sports a rich middle of malts and hops, and a bracing finish.

Best With:
This intense example of an American Pale Ale would have a wonderful relationship with a hearty meal of steaks, stews and chili's. Strong and sharp cheeses, like the Roquefort or Stilton would pair nicely.

Oskar Blues G'Knight

Product - Oskar Blues Gordon
Brewed By:
Oskar Blues
Self-Defined Style:
Double IPA
Strength (ABV):
8.7% ABV

G'Knight (formerly Gordon) is a hybrid version of strong ale, somewhere between an Imperial Red and a Double IPA. We make it with six different malts and three types of hops, then dry-hop it with a mutha lode of Amarillo hops. It features a gooey, resiny aroma and a luscious mouth feel. G'Knight is brewed with dash of chocolate malt in it, to round out its load of hops and balance the beer. The result is an assertive yet exceptionally smooth version of strong beer.

Best With:
A general rule of thumb with this beer is 'the spicier the better.' The impressive hop bitterness in this beer can stand up to just about any degree of spiciness in dry rubbed ribs, Cajun cuisine, curry based Indian food, or wasabi spiced Japanese fare.

Our new canned good is a delicious, small-batch version of the beer that made Pilsen, Czechoslovakia famous. Mama’s is made with hearty amounts of pale malt, German specialty malts, and traditional (Saaz) and 21st century Bavarian hops. It’s the perfect antidote for the watered-down, cornfed versions of pilsner clogging America’s shelves. Our first canned lager, it’s also fermented at cool temperatures with a German yeast. While it’s rich with Czeched-out flavor, Mama’s gentle hopping (about 35 IBUs) and low ABV (just 5.3%) makes it a luxurious but low-dose beer.

Rogue Dead Guy Ale

Product - Rogue Dead Guy
Brewed By:
Rogue
Self-Defined Style:
Maibock
Strength (ABV):
6.5% ABV

Gratefully dedicated to the Rogue in each of us. In the early 1990s Dead Guy Ale was created as a private tap sticker to celebrate the Mayan Day of the Dead (November 1st, All Souls Day) for Casa U Betcha in Portland, Oregon. The Dead Guy design proved popular and was incorporated into a bottled product a few years later with Maierbock as the elixir. Strangely, the association with the Grateful Dead is pure coincidence. Dead Guy is a German-style Maibock made with Rogue's proprietary "PacMan" ale yeast.

Best With:
This amber colored ale pairs nicely with brothy soups, salted almonds, game birds and seafood. This brew also offers a nice companion to cheeses and fruits.
