Saison brewed with gentian This beer is the main ingredient of gentian roots that come from cooperative micillo the Council. The roots are used in an infusion lasting 2 minutes during the last stages of boiling. The beer on the nose is dominated by pepati hints of flowers and undergrowth. The mouth is the first honey-impact, followed by hints of roots, pepper and yellow fruit. The aftertaste is delicate but very persistent.

Birra del Borgo Genziana
Aroma: Subtle spices, green apples, pears, and citrus fruit.
Appearance: Deep orangey gold in color, very hazy with ample sediment from bottle conditioning. A whispy but persistent white head foam that leaves a sticky Brussels lace on the glass.
Flavor: Delicate spices and citrus up front, light fruit and soft malt notes in the middle, giving way to a subtle, lingering finish. Mild tartness suggests some presence of wild yeast (possibly brettanomyces).
Mouthfeel: Medium body with a slightly musky feel.
Overall Impression: Overall, this is a very unique beer which would provide an excellent complement to a wide range of savory foods. The first beer I have sampled with gentian, this is a very creative approach to the saison style.
Comments: Sampled in the 12.7 oz. green glass bottle. The bottle is quite heavy, with an interesting cap with an insulated plastic liner. I would love to sample this beer aged for a year or so.
