Tripel Named Cinq Cents in 75 cl (25.4 fl.oz.) bottles, this beer with its typical golden color, its slightly hazy appearance and its fine head is especially characterized by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavor, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of Muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurized.
Best With:
This complex Tripel is a perfect choice as an aperitif with crab cakes, scallops or mussels or an assertive cheese such as a Roquefort or a Stilton; particularly delightful with asparagus. The perfect accompaniment to a fruit dessert, crepes or wonderful on its own as a digestif.

5 yrs old, opened today...
Appearance: As expected, hazy golden/yellow color. No yeast in first servings... As the bottle was poured for the later servings, it became more cloudy, as expected.
Aroma: Nothing overpowering here, not hoppy, not fruity, but there is a definite "Belgian" aroma....
Flavor: I wish my palette was more sophisticated - there is a certain sweet taste, apricots?, raisins?, but I just can't nail it down. It finishes with an astringent and bitter taste from the hops, not unpleasant however.
Mouthfeel: Not thick feeling at all. Bubbly from the carbonation, that's for sure.
Overall Impression: Decent enough, but the others (from Chimay) are better. Blue is probably my favorite.
Comments: I would not say that this one can stand on it's own for an after dinner drink as most Belgians in this category could - this on is more suited as a before drink to a meal, maybe during, depending on what you were having. I'd appreciate this one with something red (pizza, spaghetti, etc) It might go with poultry (but I think it would overpower it), and maybe something beefy - a good roast.
