Belgian ale brewed with spices Similar to the SLH07, the 2008 version is a big bold beer, brewed with water, malt (pale, special-B and chocolate), flaked wheat, dark candy syrup, dark cassonade, hops (northern brewer, hallertauer, styrian goldings and simcoe), spices (sweet orange peel, coriander seeds, cinnamon and cocoa) and yeast. The sweetness of the orange peel and malt is balanced by a fresh hop bite. What sets the '08 apart is less sweetness than 2007. Cocoa and cinnamon add bitterness, spice, and depth of flavor.

Generally speaking, Belgian ale is a gastronomic miracle. The delicate spicy and fruity nature of these ales, accentuated by the distinctive Belgian yeast strains, pairs beautifully with lamb, mussels, and semi-soft cheeses such as gouda, havarti, and tilsit.
