Cuir is our third anniversary ale. It is the same recipe as Papier and Coton, created using the Solera method. Layered with complex flavors of dark fruit, vanilla, oak, and burnt sugar, we blended a portion of both Papier and Coton that had been aging in oak barrels with this new batch of the same beer, adding an additional layer of complexity that will grow over time as we continue to age and blend with each anniversary, creating an older average age to the ale.

Farewell Ale is our interpretation of an old traditional Norwegian custom. Beer has always been an important part of the Norwegian culture and beer was always part of the important occasions in life. This was also the case when a person passed away. It was customary on all farms to have some malt at hand in case of a sudden death. Nobody was buried before the beer was ready and they could be toasted off to a good afterlife. This beer was called Gravøl (funeral ale).

Papier is our first anniversary ale, loosely brewed in the English-style Old Ale tradition using our house Belgian yeast strain. The traditional first anniversary gift is something made of paper. Layered with complex flavors of dark fruit,vanilla, oak, and burnt sugar, Papier is a robust ale, surely the perfect beer to mark our first big milestone. Pretty Things Once Upon A Time...Project KK

Once upon a time, on Friday, November 15th, 1901, an Edwardian brewer stepped into a London brewhouse and brewed a beer that confounds expectations many years later. An ale darker than most Porters that uses more hops than a modern IPA. Thanks once again to the talents of brewing hostorian, Ron Pattinson, we can reproduce this moment in time from the original brewday document. This ‘KK’ beer is brewed with several pale malts, brown malt, caramelized brewing sugars and two classic English hop varieties, Bramling Cross and Kent Goldings. O.G. 1.075, 7.8% ABV.

We brew this English-style Old Ale with American hop varietals to celebrate the idea of a snowy winter landscape, if not so much the reality of it as we experience it here in Florida. Dark copper to amber in color, it has a complex citrus and caramelized toffee aroma with underlying notes of chocolate. The flavor begins with a dark caramel to medium toffee sweetness balanced by a firm citrus dryness and then moves into a forward malt character with hints of chocolate and rye in the finish and a lingering citrus and pine note. It pairs well with spiced ham and ridiculously warm winters.

Somewhat of a cousin to Barleywine, Big Dick’s is a classic English-style Olde Ale. Sweet and full-bodied malt flavors are complemented by a fragrant but mild hop bitterness. Sweet, bready malt aromas combine with rich flavors of dark fruit, brown sugar, caramel, and sweet nuts. A beer for keeping, Big Dick’s Olde Ale will age gracefully, while fruity flavors continue to develop and bitterness will subside.
