For the winter season, we traditionally make a Belgian-style Dubbel; a rich malty pleasure that is the perfect accompaniment to those long winter nights. Last year we decided to play around with the concept and see where it might take us. After much tinkering -with a number of unique ingredients combined with wood barrel aging- we arrived at this wonderful juxtaposition of fruitiness and maltiness which harmonized magically to produce this delicious winter warmer.

Lamb, wild game, charcuterie, pâté, duck, rabbit, braised short ribs, cherry reductions, bread pudding.

Self-Defined Style:
Belgian-style Dubbel/Doppelbock with Fruit
Strength (ABV):
8.2% ABV

Rejewvenator is our Harvest-to-Harvest ale, available beginning with the barley harvest and end of Passover in Spring and closing with the hop harvest and High Holidays in Fall. This unique hybrid beer is one part traditional doppelbock and one part Belgian-style dubbel, brewed with three different yeast strains. Each year we incorporate a fruit from the Seven Sacred Species listed in the Torah: 2008 was Year of the Fig, 2009 Year of the Date, 2010 Year of the Grape. This beer combines the complexity and richness of Belgian-style ales with the malty, clean flavors of dark German lagers.

Abbey Dubbel

Ovila Abbey Ales will closely follow the traditions established by centuries of monastic brewing. “Thirty years ago, I never thought we would be working with a monastery,” says Ken Grossman, founder of Sierra Nevada Brewing Co. “I first toured some of the Belgian abbey breweries in the 1980’s, and I’ve been fascinated with the beers ever since. It’s exciting for us to work on this project, and to experiment with these unique Belgian-inspired styles. The response so far has been great, and I can’t wait for the first release.”

Belgain Style Dubbels have a history going back to the mid 1800s. Our interpretation of this style is a ruby mahogany colored beer highlighted by toffee, caramel and dark ripe fruit notes with a subtle dry finish. Great on it’s own or paired with chocolate, red meats or fish.
