Inspired by the classic French farmhouse ale, our interpretation of the Saison style gets its dark color and deep ruby hue from a hint of caramel and dark chocolate malts. While the beer is darker than many examples of the style, the citrus spice of Saaz hops provides a perfect balance of complex fruity esters with earthy and spicy notes. Dark Saison finishes slightly tart with a drying, clean, and pepper-like finish.

A Saison beer is a blend of beer, as I explained on the Saison page. Silly is one of the few Saison brewers that still stores a first batch of the top fermenting beer for about a year, and then blends the old beer with a fresh brewed batch. From this batch part is again stored
away for a year. Indeed, brewing Saison is a seasonal artwork performed only once a year.

The resulting beer is a balancing act, only mastered by the brewer who tries to get every year the same color, aroma and taste in his Saison.

Prickly pear and passion fruit mingle together for New Belgium's return to farmhouse ales. Prickly Passion Saison is truly a beer for Belgian inspiration. The combonation of passion fruit and prickly pear juices with the tropical esters of a traditionally earthy Saison yeast create a wonderfully broad and reaching mango-like character.

A classic Belgian Saison brewed using Brasserie Dupont yeast, and fermented at traditionally stratospheric temperatures - reaching 98F during primary fermentation! As an ironic nod to the Massachusetts ABCC's recent attempt to force farm brewers to use mainly MA-grown ingredients, the beer uses pilsner and wheat malts from nearby Valley Malts of Hadley, MA, as well as local unmalted wheat and spelt. The result is a quenching, complex, and aromatic light amber beer with a deceptively high 6.3% ABV.

Best With: 
Barbecue pork or brisket, wild mushroom risotto, plus any other pungent and complex savory dishes; also a very good match with washed rind cheeses.

Our Reserve Series Apricot au Poivre Saison is an artful interpretation of a Belgian Style Saison brewed with Pepper and Apricots.

Further aged in California French Oak 3rd-use Chardonnay barrels for 6 months imparts a wonderful aromatic and light oak tannins that mesh well - no single element tends to dominate.

Pours a golden body with a white head and good retention with suspended yeast. Fruity floral fruit tones, light pear and crisp citrus notes. Light hop tones and floral notes. This delightful saison finishes soft with a light sweetness. Overall very refreshing.
