Good Chit Pilsner is made with Rogue Farm barley that we Floor-Malted in small batches. Floor Malting is an, old fashioned, 8 day process that includes steeping, germination, raking, roasting, bagging and hands on love 24 hours a day. “Chit” refers to the start of the rootlets that emerge from the embryo of the kernel once steeping is complete and germination begins.

True to the classic European recipe, Tuatara Pilsner is brewed with German malt, noble Saaz hops, Czech yeast and pure, soft water. It has a floral, grassy nose followed by a smooth malty middle with some late citric tingles. A long, dry finish with touches of lime makes this an effortlessly balanced and most drinkable drop.

Serving Note: Best served at 7 degrees Celsius in a cool but not chilled glass.

The only exception in our range of beers is the Rédor, a bottom fermentation “pils” beer, filtrated but not pasteurised.
Indeed, although we are specialised in the production of top fermentation beers with refermentation in the bottle, the brewery has chosen to keep the production of a “pils” beer.
The Rédor is a pure malt “pils”, which means we only use the barley malt as starch.
We do not add grains, so the Rédor becomes a tasteful “pils” with a real bitterness.

Chilled like every other “pils” as an aperitif or companion of your daily mails but also mussles…

Finally, a cold maturation over 10 weeks in Slavonian oak barrels gives balance and royalty, oxidative light tones and sweetness on the nose with slight vanilla notes. Dedication and tradition for an extraordinary rediscovery beer.
