Braggots are historically a blend of mead and beer and have been popular since the 12th century, if not before. The combination of three unique honeys and the complexity of the hops and chamomile in this braggot-style beer create a brew that is floral with a tart-sweetness and a honey finish.

Our Kölsch is a classic golden ale that uses a centuries old yeast strain sourced from a famous Kölsch brewer in Köln, Germany. Fermented at 62 degrees, then cold conditioned, it has the delicate fruity aroma of an ale with the crisp, clean finish of a lager. It is brewed with lightly roasted malt and 100% German Noble Hops: Perle for bitterness and Hallertau Traditional for flavor and aroma.

Spike mimicked the exact process and ingredients that make a German-style kolsch great. Kolsch is a light-bodied, lightly hopped style that hails from Cologne, Germany. This particular example has a wonderful golden color and clarity, with subtle yet present hop character.
