Cuir is our third anniversary ale. It is the same recipe as Papier and Coton, created using the Solera method. Layered with complex flavors of dark fruit, vanilla, oak, and burnt sugar, we blended a portion of both Papier and Coton that had been aging in oak barrels with this new batch of the same beer, adding an additional layer of complexity that will grow over time as we continue to age and blend with each anniversary, creating an older average age to the ale.

Cosmologists tell us that the universe was made by a massive explosion called the Big Bang. And in this Big Bang was created a material called “dark matter”, which accounts for 95% of the mass of the universe and actually binds the universe together. Well, that sounds pretty heavy. But it’s theoretical. Here in Brooklyn, our cosmology is a bit different.

Best With: 
Brown ales typically have a mild hop presence and a subtly sweet, complex malt character that meshes beautifully with honey and tomato based barbecue sauce on all manner of grilled meats. Brown ale also shines with French onion soup, and could even work with a mild cigar.

High gravity black ale brewed with Ty Ty honey, copious amounts of hops and aged on toasted Spanish Cedar. Part 1 of a 4 beer collaboration between Cigar City, Hill Farmstead, and Grassroots. A note from Joey Redner: "The beers are basically black IPA’s brewed with lots of Citra, Mt. Rainier and Simcoe along with Ty Ty honey from North Florida aged on medium toast Spanish Cedar. There are different hop additions in the Hill Farmstead/Grassroots version (Or) and the 2-row base malt in the CCB version (Either) is replaced with Pilsner malt in the Vermont/Denmark version (Or).

Only 120 precious barrels were brewed, adding more than half a ton of extra malt and twice the amount of Amarillo hops, so prepare your self for a full sensory explosion. The double dry-hop addition elevates the grapefruit-like aroma and flavor to an outrageous intensity, while the added malt raises the alcohol level from 7% all the way to 10% by volume.

Abacus is a barrel aged Barley Wine. Four barrels in total were selected for the blend. The base of this year’s offering was aged in Heaven Hill bourbon barrels for 3 years! The resulting beer is strong yet extremely elegant and smooth. Big boozy bourbon and American oak aromas combined with soft chocolate malty undertones. Complex malt flavors framed in oak, with hints of dark chocolate, vanilla, tobacco, coconut and just a touch of dark cherry. This is definitely a sipping beer, best served in a brandy snifter.

Best With: 
Abacus pairs well with dark chocolate and sturdy cheeses.

In 2010 we rebrewed every recipe of Jewbelation, our Extreme Chanukah/Anniversary Ale. We then aged each recipe to-date - Jewbelations 8-14 - in Sazerac 6-year Rye Whiskey barrels and blended them. The result is "Vertical Jewbelation," a truly unique and delicious journey through 14 year of Shmaltz!

Best With: 
Wood-aged beers run a gamut of flavor profiles, however their typical robust alcohol content and mellow character enables them to work well with desserts or alone as digestif beers. Dark chocolate and its various incarnations are highly recommended.
